Beef Meatballs with Tomato Sauce & Semolina

Ingredients

Ground beef360 g
Egg1
Shallot1
Tomato basil sauce300 g
Grated parmesan4 tbsp
Breadcrumbs4 tbsp
Semolina240 g
Olive oil4 tsp

Preparation

1.

Peel and thinly slice the shallot.

Prepare the beef meatballs. In a bowl, mix the ground beef, egg, shallot, breadcrumbs and parmesan. Season with salt and pepper.

Shape the beef meatballs by rolling them between your hands. Set aside on a plate.

Heat a drizzle of olive oil in a pan over high heat. Add the meatballs and cook for 5 minutes, turning them, until nicely browned.

At the end of cooking, add the tomato sauce. Season with salt and pepper. Cover and simmer for 3 to 4 minutes over low heat, stirring occasionally.

Meanwhile, bring water to a boil. In a bowl, mix the semolina with salt, pepper and a drizzle of olive oil. Pour over an equal volume of the boiling water. Cover and let it swell for 5 minutes, then fluff the semolina with a fork.

7.

Serve the semolina in a deep plate with the meatballs in tomato sauce. Sprinkle with parmesan if you have any left, and adjust the seasoning to taste. It's ready!
