Homemade Tabbouleh

Ingredients

Semolina280 g
Tomato400 g
Cucumber400 g
Red onion1
Fresh mint leaves8 sprigs
Fresh parsley8 sprigs
Lemon4 wedges
Olive oil4 tsp

Preparation

1.

Bring water to a boil. In a bowl, mix the semolina with salt, pepper and a drizzle of olive oil. Pour over an equal volume of the boiling water, cover and let it swell for 5 minutes. Mix well afterward.

Meanwhile, wash and cut the tomatoes into small cubes.

Wash and cut the cucumber into small cubes.

Peel and finely chop the red onion.

Wash and finely chop the mint.

6.

Wash and finely chop the parsley.

7.

In a bowl, mix the rehydrated semolina, tomatoes, cucumber, red onion, parsley and mint.

8.

Add the lemon juice and a drizzle of olive oil. Season with salt and pepper and mix well.

9.

Serve the tabbouleh in a deep plate or bowl. Adjust the seasoning to taste. It's ready!
