Prepare the pancake batter. In a bowl, mix the rolled oats, eggs (1 per serving) and 30 ml of water per person. Season with salt and pepper.
Heat a drizzle of olive oil in a pan over medium heat. Spoon about a tablespoon of batter into the pan and cook for 2 to 3 minutes, you can cook several pancakes at once.
Flip the pancakes and cook for another 2 to 3 minutes on the other side, until golden and cooked through. Repeat until the batter is used up.
In a second pan, heat a drizzle of olive oil over medium heat. Add the sesame seeds and crack the remaining eggs (1 per person) on top. Cook for 2 to 3 minutes, to your liking. Season with salt and pepper.
Serve the oat pancakes on a plate with the sesame fried egg. Add the cottage cheese and avocado slices. Sprinkle with chopped chives if you have some. Adjust the seasoning to taste. Enjoy!
