Oat Pancakes with Tuna

Ingredients

Rolled oats160 g
Canned tuna, drained160 g
Eggs8
Petit-suisse cheese4
Grated cheese80 g
Tzatziki4 tbsp
Mixed salad4 handfuls
Olive oil4 tsp

Preparation

1.

Prepare the pancake batter. In a bowl, mix the rolled oats, eggs (1 per serving), petit-suisse cheese, drained and flaked tuna, and grated cheese. Season with salt and pepper.

Heat a drizzle of olive oil in a pan over medium heat. Spoon about a tablespoon of batter into the pan and cook for 2 to 3 minutes, you can cook several pancakes at once.

Flip the pancakes and cook for another 2 to 3 minutes on the other side, until golden and cooked through. Repeat until the batter is used up.

In a second pan, heat a drizzle of olive oil over medium heat. Crack in the remaining eggs (1 per person) and cook for 2 to 3 minutes to your liking. Season with salt and pepper.

Serve the oat pancakes on a plate with the fried egg. Add the green salad and tzatziki. Adjust the seasoning to taste. Enjoy!
